OLD CHINA FAIRVIEW are seeking an experienced and detail-oriented three (3) Roasting Cook to prepare and roast traditional Chinese barbecue items such as roast duck, char siu (BBQ pork), roast pork, and roasted chicken. The ideal candidate understands authentic Chinese roasting techniques, maintains high food quality standards, and works efficiently in a fast-paced kitchen environment.

Key Responsibilities

• Prepare, season, marinate, and roast Chinese BBQ items according to restaurant recipes and standards
• Operate and monitor roasting ovens and BBQ equipment to ensure proper cooking temperatures and timing
• Ensure meats are roasted evenly with correct texture, flavor, and appearance
• Prepare daily mise en place and manage roasting schedules to meet service demands
• Maintain cleanliness and organization of the roasting station at all times
• Follow food safety, hygiene, and sanitation regulations
